Mini chocolate chip cookies

These delicious mini chocolate chip cookies are soft and chewy.

  • 160 g soften salted butter
  • ½ cup brown sugar 70g
  • ½ cup white sugar 100g
  • 1 teaspoon vanilla
  • 1 egg room temp
  • 1 ½ cup all-purpose flour
  • 1 teaspoon baking powder
  • ¾ cup chocolate chips


  • Preheat oven to 180°C / 360°F
  • Line 3 trays with silicon mats or parchment paper and set aside
  • Cream butter with brown and white sugar for 2 minutes
  • Add in egg and vanilla and beat for a further minute
  • Add in flour and baking powder and mix on low speed until just combined
  • Fold in chocolate chips
  • Scoop out dough¼ into ball, about 1 teaspoon of dough for each cookie
  • Place on baking trays. Add a few more chocolate chips on top if you like for looks.
  • Bake cookies for 8 -10 minutes
  • Allow to cool on baking tray for 5 minutes before transferring to a rack to cool.


Store at room temperature in an airtight container.
Freeze baked cookies- these cookies freeze well for up to 3 months.
If you are using unsalted butter add ¼ teaspoon of salt to your dough.
